Yes, indeed, so many cuisine, so little time. There is one more thing I have learned: a single dish does not define the cuisine. It is possible you might have had a bad experience with some particular dishes but that does not mean a single dish is representative of the cuisine as a whole. Willingness to try is the key. I think I've benefited from both good first impressions, as well as negative ones.
