Oyama Sausage

As mentioned in my post yesterday, in my visit to Granville Publick Market, I purchased a couple of sausages from Oyama Sausage. Specifically, elk, duck orange and basil & pepper buffalo. Here is what I got:

The way I usually cook sausages it is putting the sausages in a pan, some water, cover and boil them at medium high temperature. When the water almost gone, lower the temperature to medium-low and sear them. However, for a change, I brought out a portable grill (I wish I had a real grill but building regulations prevent me from getting one).

And here is the final result.

Simple food is almost impossible to mess. In this case, served with baked sweet potato (which I re-heated in the grill) and some slices of tomato (just salt, pepper and a bit of olive oil).

So, how were the sausages? The elk sausage was game-y which in a way is good. The duck orange was odd, specially considering the texture of the sausage was a bit soft. Finally, the buffalo, which was the one I liked the most from the trio: game-y, but to a different extent compared to the elk sausage. Overall, the sausages were really good; however, I will leave them for special occasions. For regular eating, I will stick with pork sausages. After all, I don’t want to spoil that, right?

    I’ve had bison (buffalo) meat before, but didn’t find it too game-y, and enjoyed it tremendously in a steak/hamburger format. I had lamb tonight which is known for its “game-yness”, but wondered how this compared to the game-y flavor of elk, as I’ve never had it. Probably hard to describe, but if you could, would appreciate hearing from you.

    Hi shokutsu,

    Since a sausage and a burger is not too different from each other, I will use that as a reference. In the case of the elk, I found it to be slightly gamier to buffalo but not that much. If we had to use a 1 to 10 scale, 10 being lamb, buffalo (sausage) would be a 4 and elk (sausage) would be a 5.

    Notice, since sausages might have more spices and other ingredients than burgers, these references might be skewed, specially considering the buffalo sausage had basil and peppers.

    Having said that, there is one place I have in my queue of places to visit where I have been told have elk burgers – The Locus in Main Street, Vancouver. The other place I was interested in visiting some time ago was Stormin’ Norman’s Spirit Grill (in Commercial Drive), mainly because, in addition to elk, they have other “interesting” burgers, including ostrich. However, “was” is the keyword here as it has been closed. Ouch.
