Hmmmmm…. Burger…. That quintessential North American sandwich. And I will be more than willing to admit I am at times guilty to have one too many burgers. Something that can be really cheap (and done well) and something where you can also make it fancy for no other reason just because (and, in my opinion, break its simplicity). Despite its bad rap, if done well, it can be a thing of beauty. And, again, who better than Americans for this creation? So, on my last day in Tacoma, on my way back to Vancouver, I had to do a small stop for lunch and what better place, than, well, a burger shop? And that’s how I ended up in Friesenburgers.

After that hike in Diez Vistas, DVP couldn’t join me for dinner as she had to attend something unexpected. Alas, me “stranded” in the middle of nowhere and starting to get hungry (despite eating several handfuls of cashews before the last portion of the trail). So, while driving out of Buntzen Lake, I chose to drive through Coquitlam Centre rather than the “easier” route of Port Moody. Why? I have absolutely no idea… Could it be because I came driving that way? When I hit that mall, I remembered there was a Montana’s Cookhouse, as well as Chada Thai, I chose the former for one reason: Meat! I mean, I was darn hungry and all I could think of was meat… NOW!!!

Swallow Tail Super Club – “Underground Restaurant”

In the last year or so, a new type of “restaurants” have hit Vancouver silently. How secret? Well, how about it not necessarily registered as a “restaurant” at all? Yes, I am talking about underground restaurants, where cooks (sometime professionals, other times, regular John Doe who are skilled cooks) open their kitchen and, for a “donation”, they will cook a meal for you. It has been feature in local printed media like The Vancouver Sun and The Globe and Mail. While fellow food bloggers have visited and written about it, I have told them I wasn’t that interested in visiting them (more in a moment). However, in a “you can’t comment about it before you have done it” line of thought, I decided to tag along on an outing organized by Jonathan of Food and Tell. The chosen “underground” restaurant? Swallow Tail Super Club.

I consider myself a really reasonable person. In any arguments, if somebody can provide reasonable evidence against what I say, I will certainly consider it. Likewise, so far, I have not deleted any comments, as everybody is entitled to his/her opinion. I mention this because there has been times where I wrote I did not like/was disappointed but, not long after, readers comment I should have tried something else or, based on the comments, it sounds like it was an off day. If the argument is convincing enough, I am willing to give those places a second chance and revisit them. Two of these places are the subject of today’s post: Qoola Yogurt + Fruit and Red Robin. Condiments, condiments…

I am not sure if anybody have noticed but, I have the odd tendency of taking pictures of the condiments at the table. For example, in Friday’s post of Red Robin, I took this picture:

Of course, that is not limited to burger places. The couple of times I have been in Vietnamese ones, I have taken pictures of the one on the tables, like this from Pho Thai Hoa:

The obvious reason, of course, is to show what type of condiments are left on the table. Ah, condiments, condiments… You can’t live without some of them; sometimes you can’t help wonder why there has to be some at all. I would rather not go through that debate; rather, I would like to check with you, what is your favourite condiment?

Since I am asking, I guess I should start this. Me, being Chinese, I have to say soy sauce. C’mon, that’s your quintessential Chinese condiment/ingredient! However, that does not work with all dishes. For example, soy sauce and fries? And, since I mentioned fries, once in a blue moon, I go for catsup (OK, ketchup, which ever spelling works for you!); however, I would try with malt vinegar (just like Brits), white vinegar (here in Canada) or mayo. But, in the end, I will go for yellow mustard. In fact, mustard, is the second condiment in my list but, depending on the application, it might be a different one. For example, for dim sum, Chinese mustard; for burgers or hot dogs, yellow mustard; for other sandwiches and for salad dressing, Dijon mustard, and so on. The only one that I don’t really “like” that much would be honey mustard. After that, the following condiment would be hot sauce – more on the lines of Chinese style chili sauce. You need something spicy once in a while, you know!

Some condiments are dependant on the application but some of them I find them a bit too narrow. For example, I can’t think of using plum sauce for things other than roasted/BBQ poultry (Peking duck anybody?).

In the end, there is on cardinal rule: I always taste my food before adding any condiment (unless the dish already comes with it, like BBQ sauce or soy sauce in a lot of dishes). Needless to say, I find it a bit nerve wracking when people just start adding salt even before tasting their food…
